Spanish wine and food is very diverse in its nature. The myriad variations in Spanish cuisine are mostly a result of geographic, climatic, and cultural differences that have influenced its development. However, it can be said that Spanish cuisine is most heavily influenced by the fact that it is quite close to the sea and this gives its food a Mediterranean spirit. Spain has also had a long history of exposure to diverse cultures and other influences, all of which have combined to create a unique collection of recipes that find favor with countless culinary enthusiasts all over the world. When you consider the rich history of Spanish cuisine, it is impossible to mistake the presence of Moorish and Jewish influences. The Moors had a strong influence on Spain for several centuries and this is clearly reflected in the food. Pork has also been a part of Spanish cuisine for many centuries and this is obviously a part of the Christian identity that characterizes Spanish culture because neither Jews nor the Muslims eat pork. The Spanish colonial era was a time when South American ingredients, such as tomatoes, peppers, potatoes, and beans were introduced to Spain. It is clearly the Latin American influence that separates Spanish cuisine from most other forms of food in the Mediterranean. Spain is also well known as a producer of 44% of the olive oil in the world and it should be no surprise that olive oil is an important part of Spanish cuisine. All over Spain, the food is still cooked by hand with fresh ingredients from the market. These ingredients are available in Spanish food shops or from a grocery store anywhere in the world. Some urban centers in Spain, such as Madrid, are not the best places to go and enjoy hand cooked food with the ingredients fresh from the market. The truly fresh and hand cooked food is more readily available in the rural areas where open air markets still provide the right cultural flavor. Food is often cooked over a fire in the open, using a clay or brick oven. Another part of Spanish culture is to offer snacks whenever drinks are being served. These snacks are called "tapas" and could be in the form of cheese, olives, or pork. In several bars in Spain, the cost of wine, beer, or sherry includes tapas. Spanish cuisine also includes options for those with a sweet tooth. The traditional fried pastry dough snack known as "churro" is served with a hot chocolate dip. There is a lot of variation in Spanish cuisine though the following traits are often found to be common in several recipes. * Cooking takes place in olive oil or the oil is used raw. * Meal preparation often begins with "sofrito", a mixture of garlic, tomatoes, and onions cooked in olive oil. * Seasonings are typically made from onions and garlic. * Wine consumption with a meal is normal with most dishes as is eating bread. * Salads are used heavily and especially during summer. * Dessert is often fruit or dairy products. Cakes, etc. are reserved for special occasions. So with the secrets of Spanish cuisine being revealed, don't you think it is worth giving a try?
